Beef, Pineapple & Red Pepper Kabobs

You don’t have to give up red meat to be heart-healthy. A 3-4 ounce serving of beef provides not only protein but also iron, folic acid and other nutrients important for heart health. Plus, lean cuts like sirloin easily fit into a healthy meal. Because these beef, pineapple and red pepper kabobs are really simple to make, they’ll easily fit into your meal preparation, too!

(Makes 2 servings)

    1/2 cup bottled teriyaki sauce
    2 teaspoons minced garlic
    2 teaspoons minced fresh ginger
    1 tablespoon lime juice
    2 tablespoons pineapple juice (drained from fresh pineapple)
    1 red pepper, cut in 2-inch chunks
    8-10 ounces sirloin steak, cut into 3-x-½-inch strips
    12 fresh pineapple chunks
    4-6 bamboo skewers

Combine first 5 ingredients in medium bowl. Place red pepper in a microwave dish with a small amount of water, cover and cook on high 1- 2 minutes to slightly soften. Drain. In a large plastic storage bag, combine marinade, beef and red pepper; refrigerate and marinate 1-2 hours, turning bag once. Meanwhile soak bamboo skewers in water for about 30 minutes.

Remove beef and red pepper from marinade and thread beef, red pepper and pineapple on bamboo skewers. Baste with marinade.

Prepare grill or broiler (medium high). Place kabobs on grill and cook about 3-4 minute per side. Serve.

Serving suggestion: Serve with Basmati rice with pistachios and raisins. Cook rice according to package directions.  Add 2 tablespoons chopped pistachios and 2 tablespoons raisins, cover and let stand 5 minutes.  Serve.
