Healthy Eating: St. Patrick's Day Irish Stew
Don't go hungry on the big day! Saturday, March 17th is Saint Patrick's day, but forget the green beer and discover the traditonal cuisine of Ireland with this easy and healthy recipe direct from Belfast Telegraph (the online version of the Northern Ireland newspaper). This hearty stew will get you steppin' out in the parade with a very satisfied stomach!
Olive oil
4 large potatoes
3 carrots
2 large onions
Asparagus
Turnips
Lamb loin chops
Balsamic vinegar
Chives, parsley and tbsp chopped fresh thyme
Salt, black pepper
Veal stock
1 ½ lbs stewing lamb or mutton
Wash and prepare potatoes, carrots and turnips then steam them until cooked. Heat oil in large saucepan and sauté onions in oil. Grill chops until golden brown on each side. Cook asparagus and add to potatoes, carrots and turnips. Reduce stock until it covers the back of a spoon. Add a dash of the balsamic vinegar and season with salt and black pepper and herbs. Pour sauce into the cooked vegetables. Arrange vegetables on to a plate and place the lamb chops on top. Serve very hot with more fresh parsley on top.

My grandmother was Irish and used to make a stew like this. Delicious! I'm off to buy some potatoes and onions!
